About Us

Based in The Old Granary on the outskirts of Milton Keynes, Mountain Chefs specialise in providing Chalet Chef Gourmet cookery courses. Consisting of six fully equipped, open-plan kitchens, students have use of their own oven, sink, work space and equipment.

The course is very much hands-on and designed to cater for people of all abilities, from the complete novice to the more experienced cook. Mountain Chefs instructors are fully experienced in Alpine cooking in addition to having professional UK head chef experience. Their style is approachable, professional and fun – always getting the best out of each student, allowing them to develop at their own pace.

Our Team

Dave Russell

Dave has extensive experience as a Head Chef and in Catering Operations, working in both the UK and the United States. He joined Mountain Chefs at the beginning of 2010 and is responsible for the operational delivery of the course.

Dave has himself experienced chalet life in both private catering and delivering chalet chef courses out in the mountains.

His approachable style and dedication to students has been key to helping them on their way to becoming successful seasonaires.

John Fernandez

John is a well seasoned chef with a wealth of knowledge and experience.

John runs his own catering business whilst teaching at cookery schools nationwide.

He started his career spending a year in a gastronomic restaurant in the Alps before gaining experience at The Ritz, Park Lane and Browns before turning his hand to modern European cuisine in the capital and abroad.

Johns style is calm, friendly and informative, his motto is "time spent in the kitchen is time well invested".

Victoria Longden

Victoria comes from a background of food and as a passionate foodie herself she has made the cookery school the success it is today.

Victoria has been working with chalet companies for many years and ensures that every student receives as much support as they need on their journey to becoming a Seasonaire.
